Food/Kitchen Manager
TITLE: Micro-Enterprise Food/Kitchen Manager
JOB CLASSIFICATION: Full time, 40 hours/week; Exempt
REPORTS TO: Executive Director
JOB PURPOSE: Oversight of the daily operations of establishments that serve food and beverages, ensuring customer satisfaction and efficient business management. This role involves a wide range of responsibilities, including hiring, training, and supervising staff, managing inventory and budgets, and maintaining high standards of food safety and customer service.
RESPONSIBILITIES:
●Oversee and manage all areas of micro-enterprise and is responsible for decision making of daily operations.
●Estimates food needs, places orders with fenders, schedule and receive deliveries of ingredients and supplies, maintains accurate inventory and keeps accurate records of inventory and cost of goods.
●Orders and coordinates delivery of ingredients and supplies and rotates stock to minimize risk.
●Works to increase sales and minimize costs, including ingredients, supply, utility and labor.
●Processes purchase orders, invoices, and other banking documents.
●Identify and implement process improvements to ensure efficiency and cost control.
●Assist with planning of all food products and menu selection and ensure product preparation follows recipe guidelines.
●Participates in hiring, training, supervising and evaluating staff performance.
●Manages POS software, provides training to new employees.
●Coordinates with in-house sales and company vendors.
●Provides directions to employees regarding operational and procedural issues.
●Enforces sanitary practices for safe food handling, general cleanliness and maintenance of kitchen and dining areas.
●Oversees and maintains a database for weekly inspections to maintain cleanliness in compliance with health and safety regulations.
●Maintains security systems and implementation of building security.
●Works with executive agency personnel for efficient procurement and purchasing of supplies.
●Supervise portion control and quantities of preparation to minimize waste.
●Oversees staff schedules to ensure production aligns with customer orders and delivery
●Responsible for ensuring that financial reporting, personnel and payroll related administrative duties are completed accurately, on time and in accordance with employment policies.
●Ensures a safe working and guest environment to reduce risk of injury and accidents. Completes incident reports promptly when applicable.
●Works with administration and operations to maintain all proper licensure and permits for food service operations.
●Maintains all necessary staff certifications and records.
●Investigate, respond promptly and report all customer complaints concerning food quality and service.
●Assures compliance and maintains standards as outlined by CARF and appropriate federal, state, and local regulations. Understands and models operational, facility, employment and departmental policies and procedures
●Maintains a clean and orderly environment and a professional work appearance.
●Promote a food safety culture within the organization.
●Other duties as assigned.
QUALIFICATIONS:
●Bachelor's degree in Food Science, Food Safety, or equivalent experience in a high compliance environment.
●Must have knowledge of and experience in controlling food cost and establishing profitability of a food establishment.
●Certified Food Safety Manager (e.g., ServSafe) or equivalent certification.
●Proven experience in food safety, quality control, or a related role.
●Strong knowledge of food safety regulations and standards.
●Excellent communication and training skills.
●Analytical and problem-solving abilities.
●Attention to detail and a commitment to maintaining high standards of food safety.
●Minimum of 5 years' experience in food management and culinary operations.
